Description of the week

The fourth week of 50 Weeks in the City of Science is Food Week. The event is part of the European City of Science programme, which will last throughout 2024.

During Food Week, we will take a closer look into food and nutrition, considering various different perspectives. We must remember that eating is not only an absolutely basic biological need but also a matter of high quality of life.

The Week is planned to include a scientific conference for teaching, medical and medical-related staff (including the issue of how to work with a family with a child with abnormal body weight), as well as workshops for students, training for administrators and directors of educational institutions.

The organisers also plan local food fairs—where local producers will present their products—outdoor cooking or a tasty game for the whole family.

    • 10.00 a.m. – 3.00 p.m. – Interdisciplinary Nutrition Conference: ‘Joint Path to Children’s Health’. Conference opening the Food Week

    The event will be held by Katarzyna Brukało, DHSc, for students of the Gastronomy School in Rybnik.

    During these interactive workshops, we will embark on a fascinating journey towards a sustainable approach to food, focusing on creative and practical methods of minimising food waste.

    • teachers, students of the RVEC workshop: live cooking (a few words about what they cook and products they use), snacks
    • Katarzyna Brukało, DHSc: short lecture on zero-waste, quizzes on menu planning
    • Bashar El–Helou, coordinator of the National Centre for Nutrition Education, National Institute of Public Health – PZH – principles of composing a planetary health diet

      how community fridges work and what we can do to contribute to not wasting food
    • a short film about the Rybnik method of saving food from being wasted

    • a short presentation of the venue, a presentation of activities and volunteers’ work, supplying the community fridge with previously prepared food

    During the workshops, participants will gain practical knowledge and skills that will help them reduce food waste in everyday life and, at the same time, take care of our planet.

  • 10.00 a.m. – 4.00 p.m. – Culinary magic with a pinch of experiment: The art of eating, discovery and table manners

    Workshop programme:

    • The art of food: food art for little artists
      • creating unique works of art from available ingredients
    • Sensory experiments: how food can discover the world
      • fascinating experiments with food to awaken your senses
      • an adventure with different textures, flavours and aromas
      • the role of the senses in eating and their importance for experiencing a culinary journey
    • Table manners for little gentlemen and ladies
      • fun with savoir–vivre at the table
      • practical exercises in eating etiquette
      • taking care of good tone and polite behaviour during meals

  • 10.00 a.m. – 4.00 p.m. – Public procurement of food: do we know what we are ordering? (discussion panel, session 1 – organisation and resources)

  • 4.00 p.m. – 6.30 p.m. – I’m feeling green! Home gardens – gardening workshops for pre-schoolers and their parents

The workshop is a quick but full of creativity and practical skills session on setting up home gardens and using home herbs in your daily diet.

4.00 p.m. – 4.15 p.m. – registration and short presentation of ideas for home gardens

  • welcoming participants and a short presentation of ideas for creative home gardens
  • distribution of starter kits with plant seeds and pots

4.15 p.m. – 5.00 p.m. – Creating your own vegetable and herb gardens

  • practical tips for creating home gardens
  • planting plants
  • decorating flower pots and personalising the garden space

5.00 p.m. – 5.30 p.m. – Herbs, herbs: a short lesson about popular herbs for planting

  • presentation of the most popular herbs for planting in home gardens
  • brief information about the properties and uses of herbs: parsley, basil, mint, thyme

5.30 p.m. – 6.15 p.m. – Dietary kitchen tricks: how to use fresh herbs in meals

  • a short lesson about the planetary health diet and the good impact of fresh herbs
  • practical tips on using herbs in everyday meals

  • 10.00 a.m. – 2.00 p.m. – Healthy and fit: individual dietary consultations

The event will be held by Katarzyna Brukało, DHSc, Ewa Urban, MD, (National Institute of Public Health – PZH, Department of Health Promotion and Prevention of Chronic Diseases), and clinical dietitians.

We invite citizens for individual consultations on a healthy lifestyle, body composition analysis and dietary advice. Come any time between 10.00 a.m. and 2.00 p.m. to take advantage of free measurements and get personalised health advice.

What do we offer?

  • body composition analysis:
    • measurement of body weight, body fat percentage and other health indicators,
    • individual interpretation of the results.
  • dietary consultations:
    • advice on a balanced diet tailored to individual needs,
    • practical tips for healthy eating.

How does it work?

  • 3.30 p.m. – 6.00 p.m. – ‘From grandma’s cookbook…’

Venue: Kato Science Corner

We invite all culinary enthusiasts to join us for a meeting full of flavours and the history of family recipes. During this unique event, we will share the best and most reliable recipes that have been passed down from generation to generation. Each participant can bring their favourite recipes to create a shared ‘Grandma’s Cookbook‘!

The event will be held by Katarzyna Brukało, DHSc, and Ewa Urban, MD (National Institute of Public Health – PZH, Warsaw).

Meeting schedule

3.30 p.m. – 4.30 p.m. – exchange of recipes and culinary stories

  • participants share their favourite recipes and stories related to cooking,
  • conversations about culinary traditions and inspirations from the past.

4.30 p.m. – 5.00 p.m. – break for a tea chat

  • casual conversations and exchange of culinary experiences.

5.00 p.m. – 6.00 p.m. – lecture by Ewa Urban, MD: ‘Herbs in the kitchen and a traditional diet’

  • presentation on the role of herbs in cooking and their impact on health,
  • discussion on the traditional diet and health benefits from the perspective of prevention of nutrition-related diseases,
  • Q&A session.

This unique meeting will bring together cooking lovers so that they can exchange experiences and knowledge, and feature an inspiring lecture on herbs in the kitchen and a traditional diet. All this in the atmosphere of pleasant conversation and aromatic winter tea…

  • 10.00 a.m. – 2.00 p.m. – Tasty, good and healthy: a family odyssey to healthy eating

Venue: Kato Science Corner

We invite families to join us on an adventure concerning healthy eating! ‘Tasty, good and healthy’ is a unique event that inspires people to discover flavours, health benefits and trivia related to a healthy lifestyle.

The event will be led by Katarzyna Brukało, DHSc.

Stand 1: ‘Discovering the power of fruits and vegetables’

  • tasks and questions related to the health benefits of fruits and vegetables,
  • preparing healthy snacks from fruits and vegetables.

Stand 2: ‘A blue sea of healthy fats’

  • questions and activities about heart-healthy fats,
  • culinary workshops with snacks rich in omega-3 acids.

Stand 3: ‘Protein on the move: healthy sources for energy’

  • tasks related to the benefits of protein in the diet,
  • preparing protein snacks for active families.

Stand 4: ‘A healthy diet, a healthy mind’

  • questions and challenges related to a healthy lifestyle,
  • choosing healthy recipes for everyday meals,
  • event summary,
  • the joint signing of symbolic ‘gourmet diaries’ for participants.

Profile of the curator

Katarzyna Brukało, DHSc, works at the Department of Health Policy at the Faculty of Public Health in Bytom at the Medical University of Silesia in Katowice. She is a clinical dietitian, public health specialist and an MBA graduate in health care. Katarzyna Brukało, DHSc, is also an expert of the European Federation of the Associations of Dietitians (EFAD) and the Academy for Territorial Development in the Leibniz Association (ARL). She is involved in research and substantive leadership in many international projects under the auspices of the Ministry of Health, the World Health Organization and the European Commission. As an expert of the Ministry of Health in the field of public health, she co-created Maps of Health Needs in the field of heart failure. Her main research interests are food policy, local health policy, public procurement of food.
